Lunch With A Friend

I had the privilege getting together with one of my amazing friends a couple days ago. Life makes it difficult to get together very often, but I can't get anough of this woman! She is wise and caring, not mention a lot of fun, and she loves on my kiddo. We could talk for hours about anything, and one thing I absolutely love is that she is a safe place and trustworthy.

Everyone needs a friend like that.

She was over for lunch. I made her this salad that I have grown to love the taste combination. Salads don't have to be boring and it's amazing what you can combine together with great results.


Organic spring mix greens- I also love the romaine blend.

Shredded Chicken- See below for my chicken recipe. It's great for any recipe!
... and topped with parmesean cheese and balsamic vinaigrette. Marzetti is my favorite brand of balsamic. It is more subtle than most vinaigrettes.

My basic chicken:
Frozen or fresh boneless chicken breast
Seasoned salt (I use Tastefully Simple)
minced garlic (I use Tastefully Simple "Garlic Garlic")

Preheat oven to 350. Place chicken in oven safe dish. Put an inch of water at bottom of dish. Sprinkle garlic and seasoned salt on chicken. Bake covered for an hour or until done.

I use this chicken for everything! Pizza, salad, casseroles, etc. It's delicious. You can also eat it that way for a main dish- it's that good.
